Pie stuff

I googled this, and it sounds a lot like the way my mom makes French Coconut pie. I need to get that recipe from her.

1 1/2 cups granulated sugar
3 large eggs, beaten
1 1/2 cups sweetened flaked coconut
1/2 cup butter or margarine, melted
1 tablespoon white distilled vinegar
1 teaspoon vanilla extract
1 (9-inch) unbaked pie shell
1. Preheat oven to 350*F.
2. Combine sugar, beaten eggs, coconut, melted butter, vinegar, and vanilla; mix well.
3. Pour into unbaked pie shell and bake for 50 to 60 minutes, or until a knife inserted in center comes out clean.
4. Cool before serving.
Makes 8 servings.


Dessert on Derby day can only be one thing: a rich, dense chocolate pecan pie infused with Kentucky bourbon. The original version of this pie is heavily trademarked and fiercely protected by its inventors, but you will find several unofficial versions of it, called anything from Run for the Roses Pie to Eighth Race Pie to Thoroughbred Pie to just Chocolate Bourbon Pecan Pie.

Since you can't get the actual recipe of Kentucky Derby pie, I googled the Chocolate Bourbon Pecan Pie, and came up with this one.

"Sweet, chocolaty, crunchy, and down-right decadent, this pie is sure to please all. Corn syrup, butter, and sugar are first melted, and then eggs, bourbon, vanilla and salt are combined in a bowl and whisked along with the heated sugar mixture. Then the chocolate and pecans are mixed into the filling that 's then poured into the pie shell."
INGREDIENTS:
1 (9 inch) pie shell1 cup white sugar1 cup light corn syrup1/2 cup butter4 eggs, beaten 1/4 cup bourbon1 teaspoon vanilla extract1/4 teaspoon salt6 ounces semisweet chocolate chips1 cup chopped pecans
DIRECTIONS:
1. Preheat oven to 325 degrees F (165 degrees F).
2. In a small saucepan combine sugar, corn syrup, and butter or margarine. Cook over medium heat, stirring constantly, until butter or margarine melts and sugar dissolves. Cool slightly.
3. In a large bowl combine eggs, bourbon, vanilla, and salt. Mix well. Slowly pour sugar mixture into egg mixture, whisking constantly. Stir in chocolate chips and pecans. Pour mixture into pie shell.
4. Bake in preheated oven for 50 to 55 minutes, or until set and golden. May be served warm or chilled.
